Following coverage on James Martin’s Home Comforts show on BBC2 at the end of last year Lyburn Cheese have seen an increase in demand for their artisan hand-made cheeses. In order to cope with the upturn in sales WMH have recently supplied Lyburn with a new five-station cheese press to help increase production capacity at their New Forest dairy.
The unit supplied to Lyburn comprises of five independently controlled stations with a capacity of up to 30 cheese moulds. The design of the press maintains a constant pressure on the cheese which can be easily adjusted allowing individual control of each station making each unit fully flexible.
All WMH cheese presses are designed to offer the highest level of hygiene with sloping surfaces and open edges to minimise entrapment of whey. All WMH presses incorporate, Integral drip trays, slot in containment bars and are fully mobile being mounted on swivel and braked casters.
This is the second five-station press that WMH have supplied to Lyburn and will enable the dairy to increase capacity to 60 x 6kg cheeses per batch.
